Chef's Notes

There’s fire all over this plate, first from a jerk-seasoning rub on the Australian lamb t-bone, finished with a honey-jerk glaze. Fire roasted cauliflower and sunchokes are the pureed base of the plate, set off with a charred corn salsa for more earthy sweetness.
