Lamb Chop with Chocolate Berry Sauce

About the Dish

Ripasso is a traditional method from Veneto, Italy, which uses the sugar content of the pomace skin of Amarone brewed with dried grapes for secondary fermentation. Although it is a full-bodied red wine with a rich and condensed feeling, this natural Ripasso has a smooth mouthfeel, a slightly sweet taste, and a bitter afterglow that lingers.

Ingredients

  • 2 Lamb chops
  • 1/2 cup Mixed berries
  • 10g Bitter chocolate
  • 2tbsp Red wine
  • 1tbsp Balsamic vinegar
  • 1tbsp Dashi soy sauce
  • 10g Butter
  • Olive oil, salt, pepper: each as needed

Garnish

  • 1/4 Purple cabbage
  • 1tbsp Vinegar
  • A pinch of Sugar
  • A pinch of Salt
  • Olive oil, pepper: each as appropriate

Directions

    Season the lamb chops with salt and pepper and fry them in a frying pan with olive oil. Halfway through, place the lamb on the bottom of the pan so that the fat melts out, and cook so that both sides are entwined. When it is well cooked, remove it from the frying pan and cover it with aluminum foil to keep it warm.

    Add butter to a frying pan, add berries, red wine, balsamic vinegar, dashi soy sauce, and chocolate, and heat over medium-high heat. When the water evaporates and thickens, turn off the heat.

    Arrange the lamb and purple cabbage on a plate and pour the sauce over to serve.

Garnish

    Put the roughly chopped purple cabbage in a frying pan with olive oil and stir-fry until tender. It’s OK to add a little soy sauce.

Food and Marriage Points
The combination of rum and berries is originally outstanding, and it is standard to make use of the sweet taste, but when you add bittersweet chocolate, it instantly transforms into a luxurious adult sauce. A velvety red wine made from a special vinification method called Ripasso, and a seductive and rich harmony.
