Ingredients
MAIN
- 500g of lamb ribs
 - 3 pieces of lime leaves
 - 3 star anise
 - 5pcs cardamom
 - Oil to taste
 - 200ml of water
 - ½tsp salt
 - 1tsp sugar
 
AROMATICS
- 10 shallots, finely chopped
 - 5 garlic cloves, finely chopped
 - 5 red chilies, finely chopped
 - 2 stalk lemongrass, sliced
 - 1 segment of ginger, sliced
 - 1 turmeric segment, sliced

Heat oil, add aromatics, star anise, cardamom, and kaffir lime leaves. Once fragrant, add water, sugar, and salt, cook until reduced.

Take half for marinading the lamb ribs. Set aside for 15 minutes.

Heat non-stick pan, cook ribs until done.

Pour over remaining sauce. Serve.
