Chef's Notes

Aussie lamb leg is high heat roasted to a good char on the outside, perfectly cooked on the inside. In this small-bite presentation, slices of the lamb rest on top of classic Mediterranean “Cypriot” grain salad and a smoked eggplant puree. A watercress-mint chutney adds color and flavor contrast. Gorgeous!
