About the Dish
Replace the usual nikujaga meat with lamb and add sweet potato. If you just change the ingredients, you may feel unsatisfactory, but the “Lamb and Potatoes” devised by Chef Haruyuki Yamashita, has a perfect taste.
Main Ingredients (for 4 people)
- 220g Lamb shoulder
- 220g Potato
- 150g Sweet potato (with skin)
- 90g Carrot (with skin)
- 250g Water
- 3g Powdered bonito stock
- 50g Dark soy sauce
- 50g Caster sugar
- 50g Mirin
Peel the potatoes and cut them into bite-sized pieces. Similarly, prepare the lamb, carrot, and sweet potato into bite-sized pieces.
Put all the ingredients in the pot, cover with a lid, and simmer over medium-low heat for about 15 minutes. After that, let the flavours permeate without opening the lid until the temperature cools down.
Complete with vegetables for decoration.
