About the Dish
Bordeaux is a maker who has been attracting attention as a Cinderella winery in Saint-Emilion with natural additive-free. Merlot, Cabernet Sauvignon, Cabernet Franc. Sulfurous acid that is by-produced during brewing, total sulfurous acid including added sulfurous acid, and an ultra-trace amount of sulfuric acid that can not be detected by official inspection agencies. Natural yeast, unfiltered.
Ingredients
- 3 Eggplants
- 100g Lamb (cut off)
- 1 Chili pepper
- 1/2tbsp Garlic (grated)
- 1/2tbsp Ginger (grated)
- 1tbsp Sweet soy sauce
- 1tbsp Doubanjiang
- 1tbsp Honey
- 2tbsp Shaoxing wine
- 1/2tbsp Chicken stock (granules)
- 1tsp Soy sauce
- Salad oil: as needed

Cut the eggplant lengthwise into 4 pieces, cut into 3 equal pieces, soak in salt water for 5 minutes to remove harshness, and then wipe off the water.

Chop the lamb with a knife.

Heat a large amount of oil in a frying pan, add the eggplants from step 1, stir-fry until lightly colored, and then transfer to a tray.

In an empty frying pan, add sweet soy sauce, chili bean sauce, and round slices of chili pepper and heat until fragrant. Add rum from step 2 and fry until the color changes.

Return the eggplant to the frying pan, add Shaoxing wine, chicken stock, 50cc of water, honey and soy sauce, and bring to a boil.

Stir-fry to evaporate the water, then thicken with water-soluble potato starch and it’s done.

The sweet and salty mapo eggplant is made with sweet soy sauce and chili bean sauce, and the richness and umami of the lamb further enhances the taste. By frying the eggplant well in advance, it becomes glossy and moist. It is Bordeaux’s nature that accepts this rich dish. We recommend chilling this red wine to below 6 degrees Celsius and enjoying it with rum.
