About the Dish
A surprising ancestral that is made only from grapes and has no additives, and even sulfites that are naturally produced during fermentation are not detected. Wild yeast, naturally fermented, no added antioxidants, no detectable total SO2, certified organic, biodynamically certified, organic agro-processed spirits, vint nature, still wines of type Ancestral with classic style lees. Of course unfiltered non-filter.
Ingredients
2 cocottes with a diameter of 12cm
- 250g Lamb chopped meat
- 1 Onion
- 4 Shiitake mushrooms
- 1 Garlic clove
- 50cc Bread crumbs
- 1 Egg
- 1tbsp Red wine
- 1tbsp Worcestershire sauce
- 1tbsp Grain mustard
- A pinch of Salt
- 4 Lauriers
- Olive oil, salt, pepper: each as needed

Place onions, shiitake mushrooms, and garlic in a food processor and finely chop.

Pour olive oil into a frying pan and fry 1 slowly. When the onions turn amber and the whole amount is reduced to about half, turn off the heat and let it cool.

Chop the lamb as finely as possible with a knife.

Put 2 and 3 in a bowl, add bread crumbs, beaten eggs, red wine, Worcestershire sauce, mustard, salt and pepper, and mix well until sticky.

Fill the mold with 4., put bay leaf on top, and bake in an oven preheated to 200 degrees for 20 minutes. Turn off the heat and let it rest in the oven for about 10 minutes, and it’s done.
