About the Dish
From Abrzo, Italy. Ancestral orange wine made from 100% Malvasia, sparkling wine of perfect van nature. Natural yeast, no added antioxidants, zero total SO2, certified organic, certified biodynamic, organic agro-processed liquor, van nature, 0.225 g sugar, 0.03 g sugar per glass, total SO2 undetectable by official labs value.
Ingredients
- 2 Lamb chops
- 1 Zucchini
- 1 Onion
- 2 Tomatoes
- 1 Eggplant
- 1 Yellow paprika
- 1 Red paprika
- 2 Bell pepper
- 1 Garlic clove
- 5g Consomme granules
- 1tbsp Balsamic vinegar
- 2tbsp Olive oil
- salt, black pepper: as needed

Cut the zucchini into 2cm rounds, thinly slice the onion, roughly chop the tomato, halve the eggplant lengthwise and then cut into 2cm half-moons, cut the paprika and green pepper in half, devein and slice thinly. Crush the garlic.

Add olive oil, garlic, and onions to a stew pot and stir-fry briefly. Add the remaining vegetables, sprinkle with consommé, add about 50cc of water, cover with a lid, and simmer over medium-low heat for about 20 minutes. Bring to a boil.

Season the lamb chops with salt and pepper, and fry in a frying pan with olive oil until both sides are browned.

When the water comes out of the vegetables in the stew pot, add balsamic vinegar, put the lamb chops from 3 on top and simmer for another 15 minutes.

Season with salt and pepper to taste, serve on a plate and serve.
