About the Dish
An organic wine made from Primitivo grapes produced in Puglia by Feudi di San Gregorio, a representative of southern Italy. The mellow aroma of plum and blackberry and spicy nuances are captivating. A gorgeous dish that can be used as a treat with a fig sauce that goes well with a concentrated, full-bodied red wine.
Ingredients
- 200g Lamb meat (for steak
- 2 Figs
- 5 Black olives
- 10g Butter
- 1tbsp Balsamic vinegar
- 1tbsp Red wine
- 1/2tbsp Dashi soy sauce
- 1tsp Honey
- A pinch of Fennel seeds
- Olive oil, salt, pepper: each as appropriate

Sprinkle both sides of the lamb with salt and pepper. Cook both sides in a frying pan with olive oil over medium heat for about 2 minutes.

Cut the figs into 4 wedges and 1 into dices, leaving the skin on.

Pour olive oil into a frying pan, add figs and briefly stir-fry, then simmer with other ingredients until thickened.

Cut the lamb into pieces and put it in a bowl with 3. Garnish with arugula and more.
