Ingredients
- 700g Australian lamb chops
- Dried mint
- Rosemary
- 1kg sweet potato
- 50g butter
- Brown sugar
- Milk
- Cream
- Nutmeg
- Panko breadcrumbs
- Garlic
- Walnuts
- Rocket leaves
- Balsamic vinegar
- Olive oil
- Whole grain mustard
Directions
Preparing the Sweet Potato Mash

Boil the potatoes for 30 mins until soft

Pierce with a fork and add to preheated oven at 250C and bake for 1 hour

Scoop out insides

Mash together with butter, brown sugar, milk, cream and nutmeg

Add finished mash to an ovenproof bowl

Broil in the oven at 275C until the top is slightly browned and crispy
Lamb Chops

Mix panko breadcrumbs, mint, garlic, rosemary, finely chopped onions, salt and pepper into a bowl

Coat lamb chops in mixture

Fry in a pan using butter for 4 mins per side

Remove from the pan and rest for 10-15 mins
