About the Dish
Today was another busy day… I want to eat rice and meat (including vegetables)! This is when it’s like that. In French they call it “escabeche”.
- 200g Lamb cut for grilled meat
- 1/2 Onion
- 1/3 Carrot
- 1/2 stick of Celery
- 1 piece of Ginger
- 1 bundle of Chives
- Salt, cumin powder, wheat flour: appropriate amount
- 3tbsp White soup stock
- 2tbsp Water
- 1tbsp Vinegar
- 2tsp Soy sauce
- 2tsp Sugar
Cut the onions, carrots, celery and ginger into strips.
Stir-fry the vegetables in 1., add and turn off the heat.
Season the lamb with salt and cumin, and lightly sprinkle with flour (not listed).
Fry the lamb in a frying pan until it is fragrant.
Boil the leek quickly and cut it into 5cm pieces.
Arrange chives, lamb, and vegetables in that order.
