New Japanese cuisine
As a leading expert in “new Japanese cuisine” that maximizes the flavour of the ingredients, he participated in the World Gourmet Summit twice in a row in 2010 and 2012 as a representative of Japan.
Currently, as a Japanese Master Chef, Hal Yamashita actively introduces Japan to the world through Japanese food culture, customs, food ingredients, and agricultural products.
In addition to his own restaurant, he is also active in Japan and overseas, participating in medical, welfare, and food education events, giving lectures, publishing and writing, supervising and producing.
In addition, we are putting all our efforts into social contribution activities through food, such as establishing a fund to support drinking water for victims of the Great East Japan Earthquake and activities to support people with disabilities.
