Koji Azuma
After training at Akasaka Ishingo Group, he became a head chef at Shimbashi Bifun Azuma 2006 and qualified as a sommelier in 2009, teaching at the wine school Academy du Vin in Ginza.
The first Japanese chef to win third place at the World Chinese Culinary Championship
In 2011, he opened Chi-Fu and Az/Bifun Azuma in Osaka, where Chi-Fu was awarded one star in the Michelin Guide 2013; in 2014, he became the first Japanese chef to win third place at the World Chinese Culinary Championship in Taiwan.
He has created a wide range of cuisines, from “Chinese chimaki” for the imperial family to modern Chinese, and produced the Toranomon Hills Café and a low-sugar café. He is currently appearing on TV show ‘Magical Restaurant HERO’s Recipe’.
