- 500g Lamb, small dice
- 2 Limes
- 1 Red bell pepper
- 6 Satay skewers
Marinade
- 1tsp Shrimp paste
- 1tsp White pepper
- 1tbsp Sugar
- 5 Shallots
- 2 Kaffir lime leaves, sliced
- 2 Limes
- 1tbsp Peanuts, fried
- 5 Birds eye chillies, boiled
- 200ml Kecap manis (sweet soy sauce) to taste
- 50ml Water

Dice the lamb in 2-3 cm pieces.

Marinade: Blend birds eye chillies, shallots, peanuts, pepper, sugar and shrimp paste. Move to a bowl and add kecap manis, water, lime leaves and lime juice.

Marinade the lamb in the refrigerator for 15 minutes.

Alternate threading lamb and capsicum onto skewers.

Grill the satay skewers and baste with marinade. Grill to preferred level of doneness. Serve satay with condiments or garnish.
